A chocolate pairing dinner? Count us in! Bardessono Hotel’s Lucy Restaurant celebrates the humble cocoa bean and all of its derivations with a decadent and innovative culinary journey led by Lucy Executive Chef Nate Lindsey in collaboration with Chris Kollar of  Kollar Chocolates, and the team at B Cellars

While Bardessono, Lucy, and Chef Lindsay have enjoyed an established relationship with Kollar Chocolates and Chef Kollar from years of serving the Yountville community, this is their first collaboration.

“I’m honored to work with Chris on this unique dining experience,” said Lindsay, the native east-coaster whose refined preparations of fresh, seasonal, and locally-sourced ingredients has put Lucy on the fine dining map. “Guests will discover a new appreciation for chocolate in its authentic form and I’m excited to showcase the cuisine at Lucy in this way.”

The four-course menu focuses on chocolate’s earliest influences as a bitter companion rather than the sugary treat for which it is currently known. Savory selections of thoughtfully designed, chocolate-inspired dishes, each expertly paired with B Cellars varietals, will be capped-off with a treat of contemporary and sweet flavors.

In addition to a number of delectable items on the menu, chocolate-infused dishes include a first course of foie gras ‘chocolates’ and huckleberry blini with kumquat and Sauterne gelee; second course: piquillo pepper romanesco with white chocolate yuzu vinaigrette; third course: butternut squash cannelloni with pumpkin seed mole; fourth course: Vahlrona chocolate macadamia cake. Having worked in kitchens across  the country for nearly 17 years, Kollar decided to sweeten his culinary talents in 2009 by becoming a self-taught chocolatier. Inspired by the flavors of and techniques in making European chocolates, Kollar has traveled Europe extensively to study and learn about classic chocolate- making. He brings his knowledge back to his Yountville shop and kitchen where customers can watch him and his team through  a  glass  show  window  as they craft handmade artisan chocolates.

Any dinner at Lucy at anytime is a treat, but a chocolate pairing further elevates the experience. Echoing the aesthetic and green ethos of its Bardessono home, Lucy features gorgeous woods, such as the spectacular central dining table. Napkins are made of organic linen. Windows fold open to bring the outside in. The outdoor dining patio, illuminated with overhead lights, looks out on the resort’s soothing water features. The mood is earthy, relaxed, and elegant. Lucy’s chocolate pairing dinner takes place Thursday, November 8, 7pm, $125/per person, and $180 total per person with wine pairings
