A unique dining experience has emerged in Downtown Napa’s Oxbow District.  The former dormant COPIA was resurrected a year ago when The Culinary Institute of America (CIA), the world’s premier culinary and hospitality college, opened The Restaurant at CIA Copia. Unlike most of the CIA’s restaurants, The Restaurant at CIA Copia is professionally run, as opposed to student-run. Led by Chef Polly Lappetito, executive chef and director of restaurants of CIA at Copia, The Restaurant at CIA Copia offers innovative, market-based and globally inspired California cuisine that pairs perfectly with Napa Valley wines and craft cocktails.

According to Chef Lappetito the menu can change daily as she describes her style as creative, yet simple and approachable. Distinctive flavor profiles enhance the dining experience and tease one’s palate to try other dishes, which in our experience has not been disappointing. She can often be found with her vivacious smile visiting the dining area personally welcoming guests and adding to the description of their chosen meal.

The gardens at CIA at Copia and the CIA farm in St. Helena are sources of seasonal produce for the restaurant. In addition to a variety of fresh, imaginative dishes, The Restaurant at CIA Copia also boasts a one-of-a-kind cow- shaped cheese cart affectionately named “Bessie.”

Before joining CIA at Copia, Chef Lappetito was the executive chef at Ciccio in Yountville. Under her leadership, Ciccio was named one of the San Francisco Chronicle’s “Top 100 Bay Area Restaurants.” Prior to Ciccio, she was executive chef at the CIA’s Wine Spectator Greystone Restaurant in St. Helena. A former commercial fisherman in Alaska, Chef Lappetito is a Certified Hospitality Educator.

Modern yet timeless, the restaurant’s design offers a sleek, elegant and comfortable setting, with earth tones, hints of olive green, and lighter woods. An open kitchen allows patrons upfront views of the action while seated at a marble bar or one can choose formal dining. In the 2016 remodel of the original Copia building by CIA and Architectural Resources Group (ARG), the façade was extended nearly eight feet from its original location, allowing the dining room and its custom artwork to seamlessly blend with the property’s breathtaking patio, gardens, and olive grove. Its chic, relaxed atmosphere is perfect for a celebratory evening or as a go-to hang out with friends in an inviting lounge and modern bar area.

Part of the larger CIA at Copia facility, the restaurant joins other CIA at Copia offerings, such as daily cooking and beverage classes, wine tastings, and a lifestyle store specializing in home goods, providing guests with the ultimate Napa Valley destination for exploring, experiencing, and enjoying the world of food and wine.

The Restaurant at CIA Copia is open seven days a week for lunch and dinner: Sunday through Thursday from 11:30am – 9pm, and Friday and Saturday from 11:30am – 10pm. Happy hour runs Monday through Friday from 4-6pm. Brunch is served on Sundays from 10:30am – 2:30pm.
